Chicken Comfort Meals, Keto Style

Chicken Comfort Meals, Keto Style

We're keto-fying your childhood favorite recipes. The Quevos community firmly believes that your low-carb diet should never be the reason that you can't indulge in nostalgic comfort meals -- so they've gotten creative in the kitchen. We're here to swear off the plain chicken breast and remind you that being keto or low-carb shouldn't mean sacrificing flavor.

While we love Quevos as a delicious savory snack, their crunchy texture also makes them the perfect substitute for breading. We've taken a (Instagram) page from some amazing customers' (recipe) book to amp up chicken dinners. And we guarantee your five-year-old-self will be begging for more.

Chicken Parmesan (@amandaeatsketo)

Amanda (@amandaeatsketo) is constantly making recipes that leave us drooling over our phones -- and this chicken parm is no exception. "This is seriously one of the best meals I’ve made for a while," Amanda says, "SO GOOD! Chicken parm is one of my absolute favorite dishes and this was just a dang good recreation!"

Amanda "eyeballs" her recipes, so we kept things simple and sans measurements. She suggests a single serving of around 1/3 pound of ground chicken.

What you need:

  • Ground chicken
  • Parmesan
  • Garlic herb seasoning
  • Salt
  • Quevos (Sour Cream & Onion) crumbs
  • Egg
  • Sour Cream
  • Provolone slices
  • Red sauce
  • Zucchini noodles

How to:

  1. Preheat oven to 400 degrees.
  2. Mix ground chicken with parmesan, garlic herb seasoning and salt, and form patties.
  3. Create a mixture of egg and sour cream and put in a shallow dish/bowl.
  4. Crumble Quevos and put in a shallow dish/bowl.
  5. Dredge patties in Quevos, then in egg mixture, then back in Quevos.
  6. Bake at 400 degrees for 20 minutes; flip halfway.
  7. At 18 minutes, add provolone slice and a dollop of red sauce to the top of each patty. Broil for a few minutes until golden brown and bubbly.
  8. Heat remainder of tomato sauce on the stove, turn off the heat, and toss zucchini noodles in the sauce.
  9. Serve chicken parmesan over bed of zucchini noodles.
  10. Enjoy!
